An integral member of the culinary team at Chef Christopher Kostow’s three Michelin starred The Restaurant at Meadowood, David Guilloty combines his Puerto Rican roots with his passion for showcasing seasonal cuisine to bring new flavors to The Charter Oak.
Born and raised in Mayaguez in Puerto Rico, David and his family moved to Connecticut at the age of five where he was raised with an interest in cuisine. Inspired by a teacher at his local technical high school, David attended and received a diploma from the College of Culinary Arts program from Johnson & Wales University. Following his education, David moved to Newport, Rhode Island to work at both Tallulah on Thames and Trattoria Simpatico, developing his skill and passion for utilizing local ingredients. Several years later, with experience and real-world knowledge under his belt, David felt the desire to explore the world of fine dining restaurants.
With connections on the West Coast, David researched restaurants with Michelin starred rankings, setting his sights on The Restaurant at Meadowood. David arrived at the kitchen door at The Restaurant on an evening in December, unknowingly during one of the celebrated Twelve Days of Christmas events, inquiring for an open position. Four days later, Chef Kostow offered David a permanent position on the culinary team. David worked his way up the stations in the kitchen, achieving the title of Sous Chef just short of his third year working at The Restaurant.
In early 2019, David transitioned to the culinary team at The Charter Oak, where he continues to excel within the environment. When not working in the restaurant, David enjoys attending live performances in San Francisco, and is hoping to become a certified skydiver.
